Into the Jungle I Go

I am about two weeks out from flying out on one-way tickets to México and starting the next few years being back on the road again.  Traveling through Central & South America years ago was like nothing I had experienced before and changed the way I viewed the world.  There is something about the magic of the land and nature and the spirit of the people that has drawn me back.  I am excited to reconnect back with nature, immerse myself in different cultures, and connect with the people.  I cannot wait to explore new jungles, climb ancient Maya ruins, and do some fantastic hiking with some breathtaking waterfalls.  

As I am here in Cayman packing my belongings into boxes and beginning to make my final arrangements, it is finally starting to really hit me that this is it, that I will be leaving, and that it will be many years before I return.  As I stop to think and reflect on how far I have come since being back home for the last eight years.  During this time, I earned first a Diploma in Comprehensive Nutrition, then a Certificate in Plant-based Nutrition, then an Associate’s Degree in Applied Nutrition, and just recently, a Bachelor’s Degree in Nutrition.  Wow, what a ride it has been going to school while working full-time, but here we are finally.  It has been eight years in the making for this next chapter of my journey and new vocation!
